1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender.
2. Add Garlic
Stir in the minced garlic and cook for another minute until fragrant.
3. Add Broth and Seasonings
Pour in the vegetable broth and add salt, black pepper, bay leaves, and dried thyme. Bring the mixture to a boil.
4. Simmer the Soup
Once boiling, reduce the heat to low and let the soup simmer for 20-30 minutes, allowing the flavors to meld together.
5. Finish with Fresh Herbs
Remove the bay leaves. Stir in the chopped parsley and lemon juice just before serving for a fresh flavor.
