Prepare the Collard Greens

Rinse the collard greens thoroughly under cold water to remove any dirt or grit. Remove the tough stems and chop the leaves into bite-sized pieces.

Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Combine Ingredients

Add the chopped collard greens to the pot, stirring to combine with the onions and garlic. Pour in the vegetable broth, apple cider vinegar, and red pepper flakes. Stir well to incorporate.

Slow-Cook the Greens

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the collard greens simmer for about 45 minutes to 1 hour, stirring occasionally, until they are tender.
