Preparing the Fish and Calamari

Prepare the Fish
Pat the cod fillets dry with paper towels. Cut the cod into smaller pieces, approximately 2-3 inches each.

Prepare the Calamari
If using whole calamari, clean and slice into rings. Pat dry with paper towels.
Making the Batter

Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well.

Add Beer
Gradually add the beer to the dry mixture, whisking until a smooth batter forms. Let it sit for 10 minutes.
Preparing the French Fries
Frying the Fish and Calamari

Heat Oil
In a deep fryer or large pot, heat oil to 180°C (350°F).

Fry the Cod
Dip the cod pieces into the batter, allowing excess to drip off. Carefully place in hot oil and fry for 4-5 minutes or until golden brown. Remove and drain on paper towels.

Fry the Calamari
Dip the calamari rings into the batter and fry in hot oil for 2-3 minutes until golden and crispy. Remove and drain on paper towels.

Prepare Salsa Macha Aioli
In a bowl, mix mayonnaise with salsa macha until well combined.

In another bowl, combine ketchup with horseradish sauce. Mix until smooth.
Serving

On a large serving platter, arrange the fried cod, calamari, and French fries. Serve with salsa macha aioli and cocktail sauce on the side.
