Preheat your oven to 200°C (400°F).

Carefully shuck the oysters and place them on a baking tray.

In a pan, cook the chistorra sausage over medium heat until browned and cooked through, about 5-7 minutes. Crumble the cooked chistorra.

Sprinkle the crumbled chistorra evenly over the oysters.

Next, sprinkle the cotija cheese over the chistorra-topped oysters.

Dust the oysters with Tajín seasoning to taste.

Place the baking tray in the preheated oven and bake for about 10-12 minutes or until the oysters are cooked and the cheese is slightly melted.

Once baked, remove the oysters from the oven. Drizzle lime juice on top and garnish with fresh cilantro before serving.
