Preparation of Tortillas

    Fry the Tortillas

    Heat the vegetable oil in a large skillet over medium heat. Cut the corn tortillas into quarters and fry them in batches until crispy and golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Preparation of Salsas

    Make the Green Salsa

    In a pot of boiling water, add the tomatillos, jalapeño, and garlic. Cook for about 10 minutes until soft. Drain and blend with cilantro and lime juice until smooth. Set aside.

    Make the Red Salsa

    In the same pot, add the red tomatoes and onion. Boil for about 10 minutes until soft. Drain and blend until smooth. Add salt to taste.

Cooking the Eggs and Assembly

    Cook the Eggs

    In a non-stick skillet, cook the eggs sunny-side-up or to your preference. Season with salt and pepper.

    Assemble the Chilaquiles

    On a serving plate, place a portion of the crispy tortilla chips. Drizzle with green salsa on one side and red salsa on the other. Top with the cooked eggs, crema, crumbled queso fresco, slices of cecina, and pickled Fresno chiles.
