Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it's frothy.

  2. 2

    Make Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Rise Dough

Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

  1. 5

    Cook Filling

In a skillet over medium heat, add ground beef and cook until browned. Drain excess fat.

  2. 6

    Add Vegetables and Spices

To the skillet, add chopped onion and minced garlic. Sauté until onions are translucent. Stir in paprika, cumin, salt, and black pepper. Cook for an additional 2-3 minutes.

  3. 7

    Finish Filling

Remove from heat and stir in chopped parsley. Allow to cool slightly.

Assembling and Baking

  1. 8

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 9

    Roll Out Dough

Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a circle about 6 inches in diameter.

  3. 10

    Fill Dough

Place a generous spoonful of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal.

  4. 11

    Bake Artuke

Place the filled dough on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.

Serving

  1. 12

    Prepare Topping

While the Artuke are baking, mix yogurt with chopped fresh mint in a small bowl.

  2. 13

    Serve

Serve the Artuke warm with the yogurt-mint topping on the side for dipping.
