Haddock
Tempura String Beans
Method
Haddock
Prepare the Teriyaki Sauce
In a bowl, mix soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger until well combined. Set aside.
Cook the Haddock
In a frying pan, heat sesame oil over medium heat. Add the haddock fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through. Remove from pan and set aside.
Thicken the Sauce
In the same pan, add the teriyaki sauce mixture. In a small bowl, mix cornstarch with water to create a slurry. Add this slurry to the pan and stir continuously until the sauce thickens. Pour the sauce over the cooked haddock and garnish with sliced green onions.
Tempura String Beans
Prepare the String Beans
Trim the ends of the string beans and set aside.
Make the Tempura Batter
In a bowl, whisk together the all-purpose flour, baking powder, and salt. Slowly add the ice water while whisking until the batter is smooth and slightly thick.
Fry the String Beans
Dip each string bean into the tempura batter, allowing excess batter to drip off. Carefully place them in the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
