Marinate the Chicken

In a bowl, combine soy sauce, mirin, sugar, grated ginger, and minced garlic. Stir well until sugar is dissolved. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes to 1 hour.

Prepare the Cooking Surface

Heat sesame oil in a large skillet or wok over medium-high heat. Allow it to warm for about 1-2 minutes.

Cook the Chicken

Remove the chicken from the marinade and place it in the hot skillet. Cook for about 5-7 minutes on each side or until the chicken is cooked through and has a nice golden brown color.

Glaze with Teriyaki Sauce

Once the chicken is cooked, pour the leftover marinade into the skillet. Let it simmer for an additional 2-3 minutes until it thickens slightly and coats the chicken.
