Ravioli Filling Preparation

    Sauté Spinach

    In a pan over medium heat, add the fresh spinach and sauté until wilted, about 3-4 minutes. Remove from heat and let cool.

    Mix Filling Ingredients

    In a large bowl, combine the wilted spinach, ricotta, mozzarella, parmesan, pecorino romano, salt, black pepper, and nutmeg. Mix until well combined.

Pasta Dough Preparation

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Mix with a fork until combined, then knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Assembly

    Roll Out Dough

    After resting, divide the dough into four pieces. Roll out each piece thinly using a pasta machine or a rolling pin.

    Form Ravioli

    Place small mounds of the filling on one sheet of pasta, spacing them about 2 inches apart. Moisten the edges with water, fold the dough over, and press to seal. Cut into individual ravioli.

Sauce Preparation

    Sauté Garlic and Mushrooms

    In a saucepan, melt butter over medium heat. Add the minced garlic and sauté for 1 minute, then add sliced mushrooms and cook until tender, about 5-7 minutes.

    Make Cream Sauce

    Pour in the heavy cream and bring to a simmer. Stir in the grated pecorino romano, salt, and pepper. Cook for 2-3 minutes until slightly thickened.

    Add Spinach

    Add the fresh spinach to the sauce and cook until wilted, about 2 minutes. Remove from heat.

Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Combine Ravioli and Sauce

    In a baking dish, layer the cooked ravioli and pour the cream sauce over the top. Toss gently to coat.

    Bake

    Bake in the preheated oven for 20-25 minutes until heated through and slightly golden on top.
