Dough Preparation

1. Activate Yeast

In a small bowl, combine warm water (about 110°F) with sugar and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

2. Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour and salt.

3. Combine Ingredients

Make a well in the center of the dry ingredients and add the olive oil and the frothy yeast mixture. Stir to combine.

4. Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.

5. Let Dough Rise

Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

6. Prepare Spinach

If using fresh spinach, wash and sauté in a pan for about 2-3 minutes until wilted. Let it cool and chop finely.

7. Mix Filling Ingredients

In a bowl, combine ricotta cheese, mozzarella cheese, and chopped spinach. Mix well until all ingredients are evenly distributed.

Calzone Assembly

8. Preheat Oven

Preheat your oven to 475°F (245°C).

9. Divide Dough

Once the dough has risen, punch it down and divide it into two equal portions.

10. Roll Out Dough

On a floured surface, roll out each portion of dough into a circle about 10 inches in diameter.

11. Fill Calzone

Place half of the filling on one side of each dough circle, leaving about an inch of space around the edge.

12. Seal the Calzone

Fold the other half of the dough over the filling and press the edges together to seal. Use a fork to crimp the edges for a decorative finish.

13. Bake Calzones

Transfer the calzones to a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes or until golden brown.

14. Cool and Serve

Once baked, let the calzones cool for a few minutes before slicing. Serve warm with marinara sauce for dipping.
