Method
Preparing the Giardiniera
Make the Giardiniera
In a bowl, combine the mixed hot peppers, diced carrots, cauliflower florets, olive oil, white vinegar, oregano, minced garlic, and salt. Mix well and let it sit for at least 30 minutes to allow flavors to meld.
Cooking the Meat
Cook the Sausage
In a large skillet over medium heat, add the Italian ground sausage. Cook until browned and fully cooked through, breaking it apart with a spatula, about 8-10 minutes.
Add Pepperoni and Capicola
Stir in the pepperoni slices and capicola to the skillet with the cooked sausage. Cook for an additional 5 minutes until the meats are heated through.
Incorporate Giardiniera
Add the prepared giardiniera to the meat mixture and stir well. Cook for another 3-5 minutes to warm everything through.
Add Mozzarella
Sprinkle the shredded mozzarella cheese over the meat mixture, cover the skillet, and let it sit for 3-5 minutes until the cheese is melted.
