Pasta Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt.

Add Eggs
Make a well in the center of the flour mixture and crack the eggs into the well.

Knead Dough
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.

Rest Dough
Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
Filling Preparation

Mix Filling Ingredients
In a mixing bowl, combine the ricotta cheese, chopped parsley, chopped basil, grated Parmesan cheese, egg yolk, salt, and black pepper.

Set Filling Aside
Mix until well combined and set aside.
Assembly and Cooking

Roll Out Dough
Roll out the rested pasta dough on a floured surface to a thin sheet, about 1/8 inch thick.

Cut Pasta
Cut the dough into rectangles measuring about 3x5 inches.

Fill and Roll
Place a tablespoon of the ricotta filling at one end of each rectangle and roll it up tightly.

Repeat until all filling and dough are used.

Preheat Oven
Preheat the oven to 375°F (190°C).

Prepare Baking Dish
Spread half of the marinara or meat sauce on the bottom of a baking dish.

Arrange Manicotti
Arrange the rolled manicotti seam-side down in the baking dish.

Add Sauce
Top with the remaining sauce and cover with foil.

Bake Manicotti
Bake in the preheated oven for 25-30 minutes.

Remove the foil and bake for an additional 10 minutes until the top is bubbly and golden.
