Preparation and Cooking

Prepare the Calamari
In a large bowl, combine the flour, cornstarch, paprika, salt, and black pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture until well-coated. Shake off any excess flour.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy.

Add the Peppers
In the last minute of frying, add the sliced bell peppers to the oil to soften slightly.

Drain and Serve
Remove the calamari and peppers from the oil and drain on paper towels. Serve immediately with Island Sofrito Sauce.
