    Prepare the Marinated Onion Straws

    Slice the onion into thin rings and soak them in a mixture of red wine vinegar and sugar for at least 30 minutes.

    Prepare the Breading

    In one bowl, mix flour, cornmeal, salt, black pepper, and paprika. In another bowl, whisk together eggs and milk.

    Bread the Fish

    Dip each fish fillet into the egg mixture, then coat it with the flour mixture, pressing gently to ensure even coverage.

    Fry the Fish

    Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded fish fillets for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Sandwich

    To assemble, place a fried fish fillet on the bottom half of a brioche bun, top with Caribbean tartar sauce, some marinated onion straws, and then place the top half of the bun.
