Cook the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add the onions and sauté for 2-3 minutes until they begin to soften. Add the red and green bell peppers and minced garlic, cooking for an additional 3-4 minutes until the vegetables are tender.

Make the Sauce
Reduce the heat to low and add the coconut milk, cream cheese, jerk seasoning, salt, and black pepper to the skillet. Stir until the cream cheese is melted and the sauce is smooth.

Combine Pasta and Sauce
Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the sauce. Cook for 2-3 minutes until heated through.

Garnish with fresh parsley and serve immediately.
