Directions
1. Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until the onion becomes translucent.
2. Add the Conch and Other Ingredients
Stir in the diced conch meat, diced tomatoes, carrots, and celery. Cook for about 5 minutes, stirring occasionally.
3. Simmer the Chowder
Pour in the fish stock (or water) and coconut milk. Add the thyme, bay leaves, salt, and black pepper. Bring to a gentle boil, then reduce the heat and let it simmer for 30 minutes.
4. Finish with Lime Juice and Green Onions
Remove the bay leaves. Stir in the lime juice and chopped green onions right before serving. Adjust seasoning if necessary.
