Method

Pulled Pork Preparation

    Season the Pork

    In a bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the pork shoulder.

    Cook the Pork

    Place the seasoned pork shoulder in a slow cooker. Add apple cider vinegar and water. Cook on low for 8 hours or until the pork is tender and easily pulled apart.

Rice and Peas Preparation

    Cook the Rice

    In a large pot, combine long-grain rice, canned kidney beans, coconut milk, water, thyme, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

Jicama Slaw Preparation

    Prepare the Slaw

    In a bowl, combine jicama and carrot. In a separate small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the jicama mixture and toss to combine.

Bajan BBQ Sauce Preparation

    Make the Sauce

    In a saucepan, combine ketchup, brown sugar, apple cider vinegar, hot sauce, Worcestershire sauce, and garlic powder. Simmer over low heat for about 10 minutes, stirring occasionally.

Assembly

    Serve the Dish

    Shred the pulled pork and serve it over a bed of rice and peas, alongside jicama slaw and drizzled with Bajan BBQ sauce.
