Method

Grilling the Chicken

    Prepare the Chicken

    In a bowl, combine olive oil, salt, black pepper, and jerk seasoning. Rub the mixture onto the chicken breasts and let marinate for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked. Remove from grill and set aside.

Making the Coconut Rum Sauce

    Combine Ingredients

    In a saucepan, combine coconut milk, dark rum, brown sugar, and lime juice. Bring to a simmer.

    Thicken Sauce

    Mix cornstarch with a little water to create a slurry, and stir it into the sauce. Cook for an additional 2-3 minutes until thickened. Remove from heat.

Preparing Caribbean Vegetables

    Cook Vegetables

    Cut bell peppers, zucchini, and red onion into bite-sized pieces. Heat olive oil in a skillet over medium heat, add vegetables, salt, and pepper, and sauté for about 5-7 minutes until tender.

Cooking Rice & Peas

    Cook Rice

    In a pot, combine rice, kidney beans, coconut milk, water, thyme, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is cooked.

Serving

    Plate the Dish

    Serve grilled chicken topped with coconut rum sauce alongside the sautéed Caribbean vegetables and rice & peas.
