    Prepare the Tartar Sauce

    In a bowl, mix together mayonnaise, dill pickles, capers, lemon juice, hot sauce, and salt. Set aside.

    Marinate the Onions

    Soak the thinly sliced onions in buttermilk for at least 30 minutes.

    Prepare the Onion Straws

    In a separate bowl, mix flour, cornstarch, salt, and black pepper. Drain the onions from the buttermilk and toss them in the flour mixture until well-coated.

    Fry the Onion Straws

    In a deep pan, heat vegetable oil over medium heat. Fry the coated onion straws in batches until golden brown and crispy. Drain on paper towels.

    Cook the Grouper

    Season the grouper fillets with salt and black pepper. Heat olive oil in a grill pan over medium-high heat. Cook the grouper for about 4-5 minutes on each side, or until cooked through and flaky.

    Toast the brioche buns lightly. Place lettuce on the bottom bun, then add the cooked grouper. Top with the tartar sauce and a generous amount of onion straws. Close the sandwich with the top bun.
