Prepare the Shrimp
Peel and devein the shrimp, leaving the tails on. Pat them dry with paper towels.

Set Up Breading Station
In three separate shallow dishes, place the flour seasoned with salt and pepper in the first dish, beaten eggs in the second dish, and combine shredded coconut and panko breadcrumbs in the third dish.

Bread the Shrimp
Dredge each shrimp in flour, shaking off the excess. Dip in the beaten eggs, then coat with the coconut-panko mixture, pressing gently to adhere.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the breaded shrimp in batches, frying until golden brown and cooked through, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain.

Make the Citrus Mustard Sauce
In a small bowl, whisk together mustard, honey, orange juice, and lime juice until smooth.

Arrange the fried shrimp on a serving platter and serve with the citrus mustard sauce on the side.
