    Sauté Shrimp

    In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and ginger, sauté for about 1 minute until fragrant.

    Cook Shrimp

    Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Remove shrimp from skillet and set aside.

    Prepare Curry Sauce

    In the same skillet, add the sliced bell peppers and diced pineapple. Cook for about 3-4 minutes until slightly tender.

    Combine Ingredients

    Stir in the Jamaican curry powder and coconut milk, mixing well. Bring the mixture to a gentle simmer.

    Finish Dish

    Return the cooked shrimp to the skillet, stirring to combine. Season with salt and black pepper to taste. Simmer for an additional 2-3 minutes until everything is heated through.

    Cook Sugar Snap Peas

    In a separate pot, bring water to a boil. Add sugar snap peas and blanch for 1-2 minutes until bright green. Drain and set aside.

    Serve the coconut curried shrimp over cooked rice, garnished with the sugar snap peas on the side.
