Method

Mascarpone Mousse

  1. 1

    Prepare the Mousse

In a large bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy. Chill in the refrigerator until ready to use.

Chocolate Cake

  1. 2

    Make the Cake

Preheat the oven to 180°C (350°F). In a bowl, mix flour, cocoa powder, sugar, baking powder, and salt. In another bowl, whisk eggs, milk, oil, and vanilla. Combine wet and dry ingredients and pour into a greased cake pan. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.

Espresso Martini Jelly

  1. 3

    Prepare the Jelly

Dissolve gelatin in a small amount of warm water. In a saucepan, combine espresso, vodka, coffee liqueur, and sugar. Heat gently until sugar dissolves. Remove from heat and stir in gelatin until fully dissolved. Pour into a shallow dish and refrigerate until set, about 2 hours.

Assembly

  1. 4

    Layer the Dessert

Once the chocolate cake is cooled, cut it into layers. In serving glasses, layer the chocolate cake, mascarpone mousse, and spoon over espresso martini jelly. Repeat the layers until glasses are filled.

  2. 5

    Garnish and Serve

Sprinkle cocoa powder and chocolate shavings on top of each dessert. Serve chilled.
