Green Goddess Dressing

Fresh Arugula

Method

Preparation of Oven-Dried Tomatoes

  1. 1

    Oven-Dry the Tomatoes

Preheat the oven to 200°F (95°C). Cut cherry tomatoes in half, place them on a baking sheet, drizzle with olive oil, and season with salt. Bake for 2-3 hours until they are shriveled but not burned.

Cooking the Potatoes

  1. 2

    Fry the Baby Yukon Potatoes

Boil the baby Yukon gold potatoes until tender. Drain and let cool. In a skillet, heat olive oil over medium heat, add the potatoes, and fry until golden brown and crispy. Season with salt.

Cooking the Green Beans

  1. 3

    Prepare the Green Beans

Blanch the fresh green beans in boiling water for 3-4 minutes. Drain and immediately submerge them in ice water to maintain their vibrant color. Season with salt and pepper.

Cooking the Salmon

  1. 4

    Grill the Salmon

Rub the salmon fillets with olive oil and blackening seasoning. Heat a grill pan or outdoor grill over medium-high heat. Grill the salmon for about 4-5 minutes per side or until cooked to your liking.

Making the Green Goddess Dressing

  1. 5

    Prepare the Dressing

In a blender, combine fresh basil, parsley, avocado, lemon juice, olive oil, and salt. Blend until smooth. Adjust seasoning as needed.

Assembly

  1. 6

    Plate Your Dish

On a plate, arrange a bed of arugula, top with grilled salmon, oven-dried tomatoes, green beans, and fried baby Yukon potatoes. Drizzle with green goddess dressing before serving.
