Preparation of Pickled Shallots

1. Pickle the Shallots

In a small saucepan, combine white wine vinegar, sugar, and salt. Heat until the sugar dissolves. Pour the mixture over thinly sliced shallots in a jar. Let it cool and refrigerate for at least 30 minutes.

Preparation of Mustard Aioli

2. Make the Mustard Aioli

In a bowl, combine mayonnaise, grainy mustard, and lemon juice. Mix well and set aside.

3. Assemble the Carpaccio

Thinly slice the Wagyu beef against the grain and arrange it on a chilled plate. Top with pickled shallots, a handful of arugula, and shavings of Grana Padano. Drizzle with mustard aioli and serve with grilled bread on the side.
