Method
Preparing the Tempura Shrimp

Make the Tempura Batter
In a bowl, mix together the all-purpose flour, cornstarch, baking powder, and ice water until just combined. Do not overmix; some lumps are okay.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Coat and Fry Shrimp
Dip each shrimp into the tempura batter, allowing excess to drip off, then gently place in the hot oil. Fry in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Making the Dressings

Prepare Yuzu Soy Dressing
In a small bowl, whisk together yuzu juice, soy sauce, sesame oil, and honey until well combined.

Prepare Spicy Aioli
In another bowl, mix mayonnaise, sriracha sauce, minced garlic, and lemon juice until smooth.
Serving

Plate the Dish
Arrange the tempura shrimp on a plate. Drizzle with yuzu soy dressing and serve with spicy aioli on the side. Garnish with sliced fresh chilies, chopped cilantro, and shaved nori.
