Burger Preparation

Cook the Bacon Jam
In a skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving the fat in the pan. Add sliced onions and cook, stirring occasionally, until caramelized (about 15-20 minutes). Stir in brown sugar and balsamic vinegar, then mix in the cooked bacon. Set aside to cool.

Prepare the Fries
Preheat the oven to 425°F (220°C). Toss cut potatoes in olive oil and salt. Spread on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Make the Crème Fraiche
In a small bowl, combine crème fraiche and Dijon mustard. Mix well and set aside.

Assemble the Burger
Toast burger buns if desired. Spread a layer of dijon crème fraiche on the bottom half of the bun. Place the patty with melted cheddar on top, followed by a generous spoonful of the caramelized onion and bacon jam. Top with the other half of the bun.
