Burger Preparation

Make the Patties
In a bowl, combine the ground beef, salt, and black pepper. Divide the mixture into two equal portions and shape each into a patty.

Cook the Patties
Heat a skillet over medium-high heat. Cook the patties for 4-5 minutes on each side, adding a slice of smoked cheddar cheese on top of each patty during the last minute of cooking to melt.

Mix the Sauce
In a small bowl, combine the sour cream and Dijon mustard. Mix well and set aside.
Fries Preparation

Prepare and Bake Fries
Preheat the oven to 425°F (220°C). Cut the potatoes into fries, toss with olive oil and salt, and arrange on a baking sheet. Bake for 20-25 minutes or until golden and crispy.
Assembly

Assemble the Burger
Place one patty on a bun, top with the caramelized onion and bacon jam, add the second patty, and drizzle with the Dijon créme fraiche. Top with the other half of the bun.

Serve the burger with a side of crispy fries.
