Prepare the Pudding

Soak the Dates
In a bowl, combine pitted dates and boiling water. Let soak for about 10 minutes, then mash until smooth.

Cream Butter and Sugar
In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.

Add Eggs and Vanilla
Beat in the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients
In another bowl, mix together flour and baking powder. Gradually add this mixture to the wet ingredients.

Fold in Date Mixture
Fold in the mashed date mixture until just combined.

Bake the Pudding
Pour the batter into a greased baking dish and bake at 350°F (175°C) for 30-35 minutes, or until a toothpick comes out clean.
Make the Toffee Sauce

In a saucepan over medium heat, combine the butter, brown sugar, and heavy cream. Stir until the sugar dissolves.

Simmer the Sauce
Bring to a gentle boil and let simmer for 5 minutes, stirring constantly until thickened. Remove from heat and stir in vanilla extract.

Cut the sticky toffee pudding into squares, place on a plate, and drizzle with warm toffee sauce. Top with a scoop of vanilla bean ice cream.
