Wine Preparation

    Select Quality Grapes

    Choose high-quality Nebbiolo grapes, ideally from the Rocche dell’Annunziata vineyard.

    Fermentation Process

    Crush the grapes and begin fermentation in stainless steel tanks for 2-3 weeks.

    Aging

    Transfer the wine to oak barrels for aging, typically for 24 months.

    Bottling

    Bottling the wine and allowing it to rest for an additional 6 months before release.

Braised Lamb Shanks

    Prepare Ingredients

    Chop the onion, carrots, and celery. Mince the garlic.

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then sear on all sides until browned.

    Remove the lamb and add onion, carrots, celery, and garlic to the pot. Sauté until softened.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom to release the browned bits. Let simmer for a few minutes.
