Pork Chop Preparation

Prepare the Pork Chops
Season the pork chops with salt and black pepper. Dredge each chop in flour, dip in beaten eggs, and then coat with bread crumbs.

Fry the Pork Chops
Heat olive oil in a large skillet over medium-high heat. Fry the breaded pork chops for 4-5 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.

Make the Sauce
In a small saucepan, melt the butter over medium heat until it turns brown and has a nutty aroma. Stir in Dijon mustard, lemon juice, and salt to taste.
Arugula Salad Preparation

Prepare the Salad
In a large bowl, combine arugula and cherry tomatoes. Drizzle with olive oil and balsamic vinegar, and season with salt and black pepper to taste. Toss to combine.
