Mashed Potatoes

Mustard & Brown Butter Sauce

Arugula Salad

Method

Pork Chop Preparation

  1. 1

    Prepare the Pork Chops

Season the pork chops with salt and black pepper. Dredge each chop in flour, dip in beaten eggs, and then coat with bread crumbs.

  2. 2

    Fry the Pork Chops

Heat olive oil in a large skillet over medium-high heat. Fry the breaded pork chops for 4-5 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.

Mashed Potatoes Preparation

  1. 3

    Cook the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

  2. 4

    Mash the Potatoes

Add butter, milk, salt, and black pepper to the potatoes. Mash until smooth and creamy.

Mustard & Brown Butter Sauce Preparation

  1. 5

    Make the Sauce

In a small saucepan, melt the butter over medium heat until it turns brown and has a nutty aroma. Stir in Dijon mustard, lemon juice, and salt to taste.

Arugula Salad Preparation

  1. 6

    Prepare the Salad

In a large bowl, combine arugula and cherry tomatoes. Drizzle with olive oil and balsamic vinegar, and season with salt and black pepper to taste. Toss to combine.

Assembly

  1. 7

    Plate the Dish

Serve the crispy pork chop on a plate alongside a generous scoop of mashed potatoes. Drizzle with the mustard and brown butter sauce and serve the arugula salad on the side.
