Pie Crust

Make the Pie Crust
In a large bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 1 hour.
Apple Filling

Prepare the Apple Filling
Peel, core, and slice the Granny Smith apples. In a large bowl, mix the apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well combined.
Almond Crumble Topping

Make the Almond Crumble
In a bowl, mix almond flour, oats, brown sugar, sliced almonds, and melted butter until the mixture resembles coarse crumbs.
Assembly

Assemble the Pie
Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish. Fill the crust with the apple filling and sprinkle the almond crumble on top. Bake for 45-50 minutes until the apples are tender and the topping is golden.

Prepare the Caramel Sauce
In a saucepan over medium heat, melt the sugar until it turns amber. Stir in the butter until melted, then slowly add the heavy cream, whisking until smooth.

Allow the pie to cool slightly, then serve warm topped with a scoop of vanilla bean ice cream and drizzled with caramel sauce.
