Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.

    Add Garlic and Deglaze

    Add the minced garlic to the pot and cook for an additional 2 minutes. Pour in the white wine to deglaze the pot, scraping up any brown bits. Allow it to simmer for 5 minutes.

    Add Broth and Seasonings

    Stir in the beef broth, thyme, bay leaves, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.

    Prepare the Croutons

    While the soup is simmering, preheat the oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven for about 10 minutes until golden.

    Assemble and Serve

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle with grated Gruyère cheese. Place the bowls under the broiler for 3-5 minutes until the cheese is bubbly and golden.
