Filet Mignon

    Prepare the Steak

    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes. Season both sides with salt and black pepper.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare. Add butter and thyme during the last minute, basting the steak with the melted butter.

    Rest the Steak

    Remove the steak from the skillet and let it rest for about 5 minutes before serving.

Mashed Potatoes

    Boil the Potatoes

    Peel and cut the russet potatoes into quarters. Boil in a pot of salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Maple Mustard Brussels Sprouts

    Prepare the Brussels Sprouts

    Trim the ends of the brussels sprouts and cut them in half. In a large bowl, toss them with olive oil, maple syrup, Dijon mustard, salt, and black pepper.

    Roast the Brussels Sprouts

    Spread the brussels sprouts on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 20-25 minutes, until golden and crispy.
