Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the Duck Fat
In a small saucepan, melt the duck fat over low heat. Add minced garlic and chopped rosemary to infuse the flavors for about 5 minutes. Remove from heat and set aside.

Drain and Dry
After soaking, drain the potato strips and pat them dry with a clean kitchen towel to remove excess moisture.

Coat the Fries
In a large mixing bowl, combine the dried potato strips with the infused duck fat, salt, and black pepper. Toss until the fries are evenly coated.

Bake the Fries
Spread the fries in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Remove from the oven, let cool slightly, and serve hot as a side or snack.
