Winemaking Process

    Harvesting the Grapes

    Harvest Merlot, Cabernet Sauvignon, and Cabernet Franc grapes at their peak ripeness. Ensure that the grapes are free of rot and other defects.

    Crushing and Destemming

    Crush the harvested grapes and remove the stems. Keep the crushed grapes in a fermentation vessel.

    Fermentation

    Add yeast to the crushed grapes. Allow the mixture to ferment for about 10-14 days, maintaining a temperature of around 25-30°C (77-86°F).

    Pressing

    Once fermentation is complete, press the mixture to extract the juice from the solids. Transfer the juice to a new fermentation vessel.

    Aging

    Add oak chips to the wine for aging. Allow the wine to age for at least 12 months, monitoring the flavor profile periodically.

    Bottling

    After aging, filter the wine and transfer it into bottles. Seal the bottles with corks and store in a cool, dark place.
