Winemaking Process

    Harvesting Grapes

    Harvest Sangiovese grapes by hand in late September to early October when they are fully ripe.

    Crushing and Pressing

    Crush and destem the grapes to release the juice. Press the grapes gently to extract the juice without damaging the seeds.

    Fermentation

    Inoculate the must with yeast and allow it to ferment at controlled temperatures for 10-15 days until complete.

    Malolactic Fermentation

    After primary fermentation, allow the wine to undergo malolactic fermentation to soften acidity.

    Aging

    Transfer the wine to oak barrels and age for a minimum of 2 years, allowing complex flavors to develop.

    Bottling

    After aging, the wine is filtered and bottled, where it will continue to mature for several months before release.
