Shrimp Scampi

Prepare the Ingredients
Peel and devein the shrimp, then pat dry with paper towels. Chop the garlic, red bell pepper, and parsley. Halve the cherry tomatoes.

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add garlic and red bell pepper, sauté for about 2-3 minutes until fragrant.

Add Shrimp and Wine
Add the shrimp to the skillet and cook for 2-3 minutes until they start to turn pink. Pour in the white wine and lemon juice; simmer for another 3-4 minutes.

Finish the Dish
Add cherry tomatoes, butter, parsley, red pepper flakes, salt, and black pepper. Stir until the butter is melted and everything is well combined. Remove from heat.

Prepare the Shrimp Mixture
In a bowl, mix finely chopped shrimp, cream cheese, green onions, garlic powder, egg, salt, and black pepper until well combined.

Prepare the Baguette
Preheat the oven to 375°F (190°C). Slice the baguette into 1/2 inch thick slices.

Assemble the Toast
Spread the shrimp mixture generously on each slice of baguette.

Place the slices on a baking sheet and bake for about 10-12 minutes until the topping is golden and bubbly.
