    Prepare the Scallops

    Pat the scallops dry with paper towels and season with salt and black pepper on both sides.

    Sauté the Mushrooms

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are browned and tender. Add minced garlic and cook for an additional minute. Remove the mushrooms from the skillet and set aside.

    Sear the Scallops

    In the same skillet, add the remaining 2 tablespoons of butter. Increase the heat to medium-high. Once the butter is hot and bubbling, add the scallops in a single layer. Sear for about 2-3 minutes on each side until they are golden brown and cooked through. Do not overcrowd the pan; cook in batches if necessary.

    Add Sherry and Combine

    Once the scallops are cooked, carefully add the sherry to the skillet. Allow it to simmer for about 1-2 minutes, scraping up any browned bits from the bottom of the pan. Add the sautéed mushrooms back into the skillet and stir to combine.

    Serve

    Remove from heat, garnish with chopped fresh parsley, and serve immediately.
