Method

Prepare Grits

    Cook the Grits

    In a medium saucepan, bring water to a boil. Add grits and salt. Reduce heat to low and simmer, stirring occasionally, until thickened (about 20-25 minutes).

    Add Cream and Cheese

    Stir in heavy cream, cheddar cheese, and chopped bacon into the grits. Mix until the cheese is melted and everything is well combined. Keep warm.

Prepare Pico de Gallo

    Mix Ingredients

    In a bowl, combine diced tomatoes, onion, cilantro, lime juice, and salt. Mix well and set aside.

Cook Lobster

    Sauté Lobster

    In a skillet, melt butter over medium heat. Season lobster tails with salt and pepper, then place them in the skillet. Cook for about 4-5 minutes per side or until the lobster is opaque and cooked through.

    Add Ponzu Sauce

    Drizzle ponzu sauce over the lobster during the last minute of cooking.

Prepare Drawn Butter

    Melt Butter

    In a small saucepan, gently melt butter over low heat until fully melted. Keep warm.

Assemble Dish

    Serve

    Place a generous serving of cheesy bacon grits on a plate. Top with the pan-fried lobster, a scoop of pico de gallo, and drizzle with drawn butter. Enjoy!
