Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Apples
Peel, core, and slice the Granny Smith apples. Place them in a large bowl and toss with 1/2 cup of granulated sugar and ground cinnamon.

Make the Streusel Topping
In a medium bowl, combine the remaining 1/2 cup granulated sugar, brown sugar, flour, oats, and softened butter. Mix until crumbly.

Layer the Ingredients
In a greased 9x13 inch baking dish, layer the apple mixture evenly at the bottom, and then sprinkle the streusel topping over the apples.

Bake in the preheated oven for 30-35 minutes or until the apples are tender and the topping is golden brown.

Allow to cool slightly, then serve warm with a drizzle of caramel sauce and a scoop of vanilla bean ice cream on top.
