    Prepare the Lobster Tails

    Preheat the oven to 425°F (220°C). Using kitchen scissors, cut the top shell of the lobster tails lengthwise down the center, exposing the meat. Gently lift the meat out of the shell and lay it on top, keeping it attached at the base.

    Season the Lobster

    Drizzle olive oil over the lobster tails and season with salt and black pepper. Squeeze half of the lemon juice over the tails.

    Roast the Lobster Tails

    Place the lobster tails on a baking sheet and roast in the preheated oven for about 12-15 minutes or until the meat is opaque and cooked through.

    Cook the Asparagus

    While the lobster is roasting, bring a pot of salted water to a boil. Add the asparagus and cook for 3-4 minutes until tender but still crisp. Drain and set aside.

    Prepare the Lemon Butter Sauce

    In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat and stir in the remaining lemon juice.

    Serve

    On a plate, serve the roasted lobster tails alongside mashed potatoes and asparagus. Drizzle the lemon butter sauce over the lobster and vegetables.
