Prepare Pimento Cheese
In a mixing bowl, combine cream cheese, sharp cheddar cheese, diced pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, and salt. Mix well until smooth and creamy. Set aside.

Make Fried Green Tomatoes
Set up a breading station with three bowls: one with flour, one with beaten eggs and milk, and the last with cornmeal. Dip each tomato slice in flour, then the egg mixture, and finally coat with cornmeal. Heat oil in a skillet over medium heat and fry each tomato slice until golden brown on both sides. Drain on paper towels.

Prepare Bacon-Onion Jam
In a skillet, cook bacon until crispy. Remove bacon and drain excess fat, leaving about 1 tablespoon in the skillet. Add sliced onion and cook until caramelized. Add brown sugar, balsamic vinegar, and cooked bacon back to the skillet. Cook for an additional 5 minutes until the mixture thickens. Season with salt.

Make Secret Sauce
In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, garlic powder, and salt. Set aside.

Assemble the Burger
Spread a generous amount of pimento cheese on each burger patty. Top with a fried green tomato, a spoonful of bacon-onion jam, and a drizzle of secret sauce. Serve on hamburger buns.
