    Prepare the Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper to taste.

    In a separate pot, bring salted water to a boil. Add the asparagus and cook for 3-4 minutes until bright green and tender-crisp. Drain and set aside.

    In a saucepan, combine lemon juice, heavy cream, and thyme. Simmer until reduced by half. Gradually whisk in the butter until the sauce is smooth and creamy. Season with salt and pepper.

    Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Cook for 4-5 minutes on each side or until cooked through and flaky.
