    Sauté the Vegetables

    In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion, bell pepper, and celery. Sauté for about 5 minutes until softened.

    Add Garlic and Sausage

    Stir in minced garlic and sliced andouille sausage. Cook for another 3-4 minutes until the sausage is browned.

Cooking the Jambalaya

    Combine Ingredients

    Add the canned diced tomatoes, Cajun seasoning, bay leaves, and okra to the pot, stirring to combine. Cook for another 2 minutes.

    Add Rice and Broth

    Stir in the rice, followed by the chicken broth. Bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover, and let simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

    Add Shrimp

    After 20 minutes, add the shrimp, stirring gently. Cover and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

    Season and Serve

    Remove bay leaves, season with salt and black pepper to taste, and serve hot.
