Prepare the Broth
In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and red bell pepper. Sauté for about 5 minutes until softened.

Add Tomatoes and Spices
Stir in the diced tomatoes, chicken or fish stock, red pepper flakes, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 15 minutes.

Add Seafood
Carefully add the market fish, gulf shrimp, and Maine mussels to the pot. Cover and cook for about 5-7 minutes or until mussels have opened and shrimp are pink.

Serve
Remove the bay leaf. Ladle the bouillabaisse into bowls and garnish with fresh parsley before serving.
