Steak

Method

Cooking the Steak

  1. 1

    Season the Steak

Generously season the Delmonico ribeye steak with salt and black pepper on both sides.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

  3. 3

    Cook the Steak

Add the steak to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let rest for 5 minutes before slicing.

Making Brabant Potatoes

  1. 4

    Boil the Potatoes

Place the baby potatoes in a pot of salted water and bring to a boil. Cook until fork-tender, about 10-15 minutes.

  2. 5

    Sauté the Potatoes

Drain the potatoes and let them cool slightly. In a skillet, melt the butter and add minced garlic. Add the potatoes and sauté until golden brown and crispy. Stir in chopped parsley and season with salt.

Preparing Tabasco Onion Straws

  1. 6

    Soak the Onions

Soak the thinly sliced onions in milk for 30 minutes.

  2. 7

    Make the Batter

In a bowl, combine all-purpose flour, cornstarch, Tabasco sauce, salt, and black pepper.

  3. 8

    Coat and Fry the Onions

Remove the onions from the milk, allowing excess to drip off. Dredge in the flour mixture and fry in hot vegetable oil until golden and crispy, about 2-3 minutes. Drain on paper towels.
