Prepare the Wings
Preheat your oven to 425°F (220°C). Rinse the chicken wings under cold water and pat them dry with paper towels. Place them in a large bowl and season with salt and black pepper.

Make the Glaze
In a saucepan over medium heat, combine the honey, soy sauce, minced garlic, red chili flakes, and grated ginger. Stir well and bring it to a gentle simmer. Let it cook for about 5 minutes until slightly thickened, then remove from heat.

Coat the Wings
Pour half of the glaze over the seasoned wings and toss to coat evenly. Reserve the remaining glaze for later.

Bake the Wings
Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the wings in a single layer on the rack. Bake in the preheated oven for 30-35 minutes, turning halfway through, until they are crispy and cooked through.

Glaze Again
Remove the wings from the oven and brush them with the reserved glaze. Return them to the oven for an additional 5-10 minutes to caramelize the glaze.

Remove the wings from the oven and let them rest for a few minutes. Serve hot, garnished with additional chili flakes if desired.
