Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes, then remove from the oven and let it cool.

Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in the granulated sugar, mixing until well combined. Add the sour cream, vanilla extract, and eggs, one at a time, mixing on low speed after each addition until fully incorporated.

Combine and bake
Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.

Chill and serve
After the cheesecake has cooled, cover it with plastic wrap and refrigerate for at least 4 hours or overnight. Once chilled, remove the cheesecake from the springform pan, slice, and serve.
