Cedar Plank Salmon Directions

    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour to prevent it from burning during cooking.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Cook the Potatoes

    Toss fingerling potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes until tender, turning halfway through.

    Prepare the Broccolini

    Blanch broccolini in boiling water for 2 minutes, then transfer to ice water to stop the cooking. Drain and set aside.

    Make Lemon Dill Butter

    In a bowl, mix softened butter, lemon juice, fresh dill, salt, and pepper until combined. Set aside.

    Prepare the Salmon

    Place the soaked cedar plank on a baking sheet and arrange the salmon fillet on top. Drizzle with olive oil, season with salt and pepper, and spread some lemon dill butter over the top.

    Bake the Salmon

    Transfer the baking sheet with the cedar plank and salmon to the oven and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Cook the Broccolini

    While the salmon is baking, sauté the blanched broccolini in a pan with a little olive oil for about 3-4 minutes until heated through. Season with salt and pepper.

    Serve the cedar plank salmon with roasted fingerling potatoes and sautéed broccolini on the side. Drizzle with any remaining lemon dill butter.
