Marinate the Chicken
In a large bowl, combine the buttermilk, 1 tbs of Old Bay seasoning, salt, and pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Coleslaw
In another bowl, mix the coleslaw mix, mayonnaise, apple cider vinegar, honey, and paprika. Stir well and refrigerate until ready to use.

Dredge the Chicken
In a shallow dish, combine the flour and remaining Old Bay seasoning. Take the marinated chicken out and let excess buttermilk drip off. Dredge each piece in the flour mixture, pressing lightly to adhere.

Fry the Chicken
In a large skillet, heat cooking oil over medium-high heat. Once hot, carefully add the chicken pieces, frying in batches if necessary. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche buns lightly. On the bottom half of each bun, add a piece of fried chicken, a scoop of coleslaw, pickles, and drizzle with secret sauce if desired. Top with the other half of the bun.

Serve the sandwiches with a side of Old Bay chips and enjoy!
